spinach croquettes


  • 2 packets of spinach (raw)
  • 2 cups rolled oatmeal (soaked) or cooked organic brown rice < / li>
  • 1 tablespoon wheat flour or rice flour, quinoa, corn etc.
  • 1/2 pound whole wheat bread or wheat germ < / li>
  • Taste nutmeg
  • Taste sea salt
  • Taste pepper


Preheat the oven.

Cut the spinach into very small pieces. set aside.

Soak the oats for 20 minutes with a little hot water (all covered) or until it is completely soft.

Put the spinach together in pieces and raw in small small pieces with the oatmeal.

Add the flour, nutmeg, pepper and salt little by little to taste.

Mix the ingredients well forming a uniform paste, if you want you can help with a hand mixer to achieve it more easily.

The dough should be dry enough to form the croquettes. If it is too soft you can add more flour or more dry oats.

Manually mold the croquettes and coat them with the breadcrumbs.

Oil a baking dish very slightly and place the croquettes in it.

Bake over medium heat until they are golden brown.

Remove from the oven and consume hot.

Gluten-free replacements:

The flour of wheat you can replace it with any other type of flour: quinoa, corn, rice, etc.

Breadcrumbs can be replaced with wheat germ

Oatmeal can be replaced with cooked brown rice.
