Today’s recipe is the perfect excuse to cook up a good seitan protein dish, giving it a fun exotic twist with just two ingredients: curry and coconut oil. If you still don’t know what to do for dinner today, this recipe for seitan with curried vegetables will brighten up your night.
- 400 g of seitan
- 3 green peppers
- 2 red peppers
- 1 onion
- 100 g of soy sprouts
- 2 cc of curry
- 2 tbsp coconut oil
- Fresh cilantro
- Roasted sesame seeds
- Salt
- Julienne the onion and cut the peppers into strips.
- In a hot pan add a little olive oil and first sauté the red pepper. After 5 minutes, add the rest of the vegetables and sauté between 5 and 10 minutes, but always leaving the vegetables al dente.
- Add a pinch of salt, the curry and coconut oil. Remove and remove from the pan. Reserve the vegetables separately on a plate or in a bowl.
- Cut the seitan into 1-centimeter-wide strips and fry it in the pan where we have prepared the vegetables taking advantage of the remaining oil.
- When the seitan is golden, add the vegetables. Mix and turn off the heat.
- We can serve the seitan with curried vegetables accompanied by coriander leaves and sesame seeds.
