Seitan with vegetable curry

  • 400 g of seitan
  • 3 green peppers
  • 2 red peppers
  • 1 onion
  • 100 g of soy sprouts
  • 2 cc of curry
  • 2 tbsp coconut oil
  • Fresh cilantro
  • Roasted sesame seeds
  • Salt
  1. Julienne the onion and cut the peppers into strips.
  2. In a hot pan add a little olive oil and first sauté the red pepper. After 5 minutes, add the rest of the vegetables and sauté between 5 and 10 minutes, but always leaving the vegetables al dente.
  3. Add a pinch of salt, the curry and coconut oil. Remove and remove from the pan. Reserve the vegetables separately on a plate or in a bowl.
  4. Cut the seitan into 1-centimeter-wide strips and fry it in the pan where we have prepared the vegetables taking advantage of the remaining oil.
  5. When the seitan is golden, add the vegetables. Mix and turn off the heat.
  6. We can serve the seitan with curried vegetables accompanied by coriander leaves and sesame seeds.
