Seitan stew with thyme with the aroma of red wine and grandfather's vegetables

Ingredients

  • 500 grs of seitan ( some tofu taco can be added)
  • 1 medium taco potato
  • 2 carrots
  • 1 piece of green pepper and another piece of red
  • 1 piece of ginger
  • Dried thyme
  • Half a glass of red wine (125cc) 3 tbsp salsa sauce fried tomato (if possible homemade)
  • 1 tbsp flour.
  • 50 gr. of dried mushrooms (boletus edulis goes very well) virgin olive oil, salt and pepper.

) Put the mushrooms to hydrate (we will use the water later for the stew

) Chop the ginger, the peppers and the carrots in small to very small pieces, season.

) Sauté the minced vegetables in a pan for about 4 or 5 minutes.

) Add the seitan to cubes of about 2 cm, lightly seasoned and the potatoes to fry with the vegetables for 4 minutes, a few touches of ground pepper and dried thyme.

) Add the flour to the sauce and stir for 2 minutes so that it browns but do not stick, this is what will give consistency to the sauce.

) Add the mushrooms and reserve the soaking water. leave another couple of minutes sautéing and stirring.

) Add the wine in a big way!!, the reserve aroma mixed with the smell of mushrooms and thyme will begin to intoxicate the atmosphere and everyone who the house walks, zombies begin to appear in the kitchen… ummmm how it smells.

) The slow fire is extremely important (remember, one of the secrets of haute cuisine). Here we apply it conscientiously, let the alcohol in the wine evaporate and then add the tomato sauce. This could already be taken like this, but… don’t get impatient.

) As I said before, now it’s just a matter of controlling the heat and the thickness of the sauce, if we see that it thickens too much We will add the water from the soaking of the mushrooms, we will leave the item for about 20/30 minutes over a very low heat and with the pot covered.
