I have already told you on occasion that LluÃs and I like to enjoy dinner on the sofa while we watch a movie or series, or sometimes we go on excursions and we like to take food from home. On these occasions, a sandwich is an excellent option, because of how comfortable it is to transport and eat, and because it allows you to make authentic delicacies like the one I am showing you today.
- ½ baguette
- 1 small can of canned roasted red pepper
- 100 g. of seitan
- A handful of fresh spinach
- 400 g cooked chickpeas
- 70 ml water
- 50 ml olive oil
- 1 garlic
- The lemon juice
- 1 clove garlic
- 1 tbsp tahini
- ½ cp of cumin
- ½ cp of sweet paprika
- ½ salt cp
- First fillet the seitan and make the hummus.
- To prepare the hummus, clean and drain the chickpeas. Peel the garlic and squeeze the half lemon. Put all the ingredients, except the paprika, in a blender and blend until smooth.
- To braise the seitan, heat a nonstick skillet, add a little oil and brown the seitan fillets on both sides. Before removing it, add the Modena vinegar (or concentrate diluted in a little water) over the seitan and allow the liquid to be consumed.
- Assemble the sandwich. Spread a good amount of hummus on each half, place the fresh spinach leaves, seitan and finally the pepper.
