Making the tofu scramble is as easy as crumbling the tofu a bit with your fingers, frying it in the pan with a little oil and soy sauce, and seasoning to taste. It couldn’t be easier, right? But first, let me tell you a little about this recurring ingredient in vegan and vegetarian cuisine.

Scrambled tofu with asparagus

Ingredients
  • 275 gr. of firm tofu
  • 150 gr. of fine green asparagus
  • 70 gr. cherry tomatoes
  • 2 cc turmeric
  • 2 tbsp soy sauce
  • Pepper to taste
Preparation
  1. Cut the asparagus into 2-3 cm pieces and the cherry tomatoes in half. Reserve.
  2. Crush the tofu with your hands and reserve.
  3. In a very hot pan , add a little oil and sauté the asparagus for about 7 minutes.
  4. Add the cherry tomatoes and sauté together with the asparagus for 3 more minutes. Remove from the pan and reserve.
  5. In the same pan, sauté in tofu with a little oil for about 5 minutes. Stirring from time to time so that it cooks evenly and doesn’t stick to the pan.
  6. A minute before removing the tofu, add the soy sauce , turmeric and pepper. We also add the asparagus and tomatoes. Stir and let cook until the tofu is dry.
