Very good to all! Today I bring a vegetarian recipe for use in its purest form. One of those that you make from the ingredients that you have left over from other dishes. In this case, it’s time for a Scrambled Beans with sweet potato, potato and green sauce, all baked.

It is a forceful and autumnal recipe, easy to prepare and with very accessible ingredients. It is delicious, aromatic and you can play with the flavor as you like. In fact, when I prepare it, I usually add different spices. In this case I gave it all the flavor with the green sauce: a mixture of olive oil, minced garlic and fresh parsley. But other ingredients that usually go very well in this type of baking are: black pepper , oregano, garlic powder,…  Or even a good vegan sauce (a egg-free mayonnaise, vegan) to accompany.

Ingredients

200 gr of cooked red beans
1/2 pepper
1/2 onion
2 garlic
1 sweet potato small
2 potatoes
Parsley
Olive oil

Step by step

  1. Peel and cut the sweet potato and potato into cubes.
  2. Put them to cook in a pot with plenty of boiling water, and keep cooking until the sweet potato can be easily pierced.
  3. On the other hand, chop the onion and reserve it.
  4. Chop the garlic, and place in a container with 1 finger of olive oil.

  5. Chop a sprig of parsley, add it to the oil and crush until the oil turns greenish.
  6. Reserve.
  7. Take the pepper, cut it into strips.
  8. In a baking tray, mix the cooked sweet potato and potato, the pepper strips and the onion (not the beans yet)
  9. Add a splash of olive oil with garlic and parsley, mix and bake at 180 degrees, above and below.
  10. We keep baking until the potatoes and sweet potato are golden, so add the beans.
  11. Bake again, 5 more minutes.
  12. Remove from the oven and add another splash of the green sauce. And ready to eat!
