Salted caramel brownies

Ingredients

  1. Salted caramel:
  2. 150 ml coconut cream
  3. 4 tablespoons caster sugar
  4. 4 tablespoons Rice malt syrup
  5. 4 tablespoons peanut butter
  6. 1 teaspoon fine Himalayan pink salt
  7. Brownies:
  8. 1 1/2 cup flour

  10. 1 1/2 cup powdered sugar
  11. 1/2 cup raw cocoa powder
  12. 1 teaspoon baking powder
  13. 1 cup soy milk
  14. 2 flaxseed eggs
  15. 200 ml coconut oil
  16. 1 tsp vanilla extract

Procedure

Prepare the salted caramel:

  • Heat the coconut cream in a saucepan. In a separate saucepan, add the sugar and an equal part water (i.e. 4 tablespoons sugar to 4 tablespoons water).
  • Over low heat, toss the sugar until fluffy golden color.
  • Then add the cream.
  • Mix together the syrup, peanut butter and salt.
    • Beat in the cream.
    • The mixture will take on a rich caramel color.

    For the brownies:< /p>

    • Prepare flaxseed eggs and set aside (For each egg, mix 1 tbsp ground flaxseed with 3 tbsp water. Mix well).
    • Mix all together dry ingredients.
    • I use a separate bowl to mix the wet ingredients together.

  • Beat the wet ingredients in mix dry ingredients until smooth.
  • Pour m brownie mixture into prepared pan.
  • Pour the caramel mixture over it.
  • Slide the caramel mixture with a knife and swirl.

  • Bake for 35-40 mins.
    • Cut into 12 squares and serve dusted with icing sugar.
