Roasted Cauliflower Fattoush

Ingredients

  1. 1 small head of cauliflower, divided into small florets
  2. 1 small gem salad
  3. 5 -6 cherry tomatoes, halved
  4. 1/3 large cucumber, peeled, seeded and cut into crescents
  5. 5-6 radishes, roughly chopped
  6. 2 pitas, toasted
  7. < li>30 g (or 2 tbsp) flat-leaf parsley

  8. 30 g coriander
  9. 15 g (or 1 tbsp) mint
  10. < li > For the cauliflower marinade:

  11. 1 tsp smoked paprika powder
  12. 1 tsp cumin
  13. 1/2 tsp ground cinnamon
  14. 1/ 2 tsp chili powder
  15. 1/2 tsp allspice
  16. a pinch of cayenne pepper
  17. juice of 1 lime
  18. 1 tsp agave
  19. 1 tablespoon olive oil
  20. Sea salt and pepper
  21. For the chilli vinaigrette:
  22. 1 teaspoon of chili paste from a jar
  23. 1 tablespoon red wine vinegar
  24. 1 teaspoon agave
  25. Juice of 1/2 lime
  26. 3 tablespoons olive oil
  27. Salt and pepper
  28. For the tahini dressing:
  29. 3 tablespoons of hummus
  30. 2 tablespoons of tahini
  31. 1 teaspoon of agave
  32. Juice 1/2 lime
  33. < li>1/4 cup water

Preparation

  • Place the cauliflower florets in a casserole dish. Whisk the marinade into a smooth paste and pour over the cauliflower florets, toss to coat and bake for 35-40 minutes or until browned.
  • Place the entire lettuce on top distribute ingredients in a large bowl. Whisk the chili vinaigrette ingredients together until emulsified and pour about a third over the salad. Mix gently.
  • Lightly toast the pitas and cut into triangular, bite-sized pieces. Drizzle with a third of the chilli dressing and place in the salad bowl.
  • Finely chop the parsley, cilantro and mint together and sprinkle half over the salad bowl ingredients. Mix gently.
  • Stir the ingredients for the tahini sauce until smooth, adding a little more water if necessary.
  • Remove the roasted cauliflower Remove from the oven and season lightly with a little sea salt. Add to the salad and toss gently. Serve in a bowl, drizzle with the tahini vinaigrette and some smoked paprika.
