You won’t believe how delicious these roasted potatoes are! Although they are a very simple recipe, they really are delicious. It is a very simple and economical accompaniment that can be taken with any type of dish.

I love potatoes in every possible way: pureed, in soup, fried… I don’t know what they have, but I can’t resist! They are also a very versatile ingredient and can be cooked in many different ways.

Ingredientes

  • 450 g patatas, peladas (opcional) y cortadas en dados
  • 12 cucharadas aceite de oliva virgen extra
  • 1/4 cucharadita sal
  • 1/4 cucharadita ajo en polvo
  • 1/8 cucharadita pimienta negra molida
  • 1 cucharada perejil fresco (opcional), picado

Instructions

  1. Preheat the oven to 200ºC or 400ºF.
  2. Put all the ingredients in a large bowl and mix until well combined (I usually use my hands). You can also mix them directly on the baking sheet if you like.
  3. Put the potatoes on the baking sheet and bake for 20-30 minutes or until golden brown.< /li>
  4. Add the parsley, the seasoning for chicken or the Italian seasoning, or serve with a little vegan butter or vegan mayonnaise. You can also accompany them with seitan, tempeh or vegan-meat-pie.
  5. Save leftovers in an airtight container in the fridge for about 5-7 days.

Notes

  • You can use any variety of potato to make this recipe.
  • You don’t need to peel the potatoes, especially if they are organic.
  • < li>Add whatever spices and herbs you like.

  • I usually use pink Himalayan salt, but any kind of salt works.
  • If you don’t want to roast the potatoes, you can just steam them until tender, then transfer them along with the rest of the ingredients to a pan and sauté until golden brown.
