Rice with broccoli

Ingredients

  • For rice:
  • 1 glass of rice pump
  • 2.5 glasses vegetable broth
  • 3 mushrooms
  • Broccoli pieces
  • 50 g red pepper
  • Saffron, a few strands
  • 1 tsp smoked paprika

  • Salt, to taste
  • for textured soybeans:
  • 40 g fine textured soybeans
  • Vegetable broth, amount needed to moisturize soybeans
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp smoked paprika

Preparation

To prepare our mixture, pour the flakes into a deep container. add the cumin, smoked paprika, garlic powder and salt over the dry flakes.

Next, add a splash of vegetable broth to hydrate the flakes. that covers stir to mix everything well and let it absorb for two minutes.

If we see that it needs a little more broth, we water it again until it takes on a consistency very similar to meat. stir once more, let stand another 2 minutes and set aside.

We follow the well-known route: add the ingredients that make up the sauce one by one. we overturn the mushrooms, the broccoli, the peppers and the textured soybeans. we stir so that everything is well embraced of flavors and colors.

When the ingredients have taken on a bronze tone and have cooked a little, it is time to add the rice.

Let’s pour the measure of rice over the sofrito and stir well. We toast the grains for two minutes and then add the amount of vegetable broth. spread the rice well and add the saffron.

Adding the saffron, remember that once the broth has been poured, do not touch the rice to disturb its cooking. Now comes the most demanding part of paella: the times. For this rice, as soon as we add the vegetable broth, we use 3 minutes over high heat to bring it to a boil.

Then, we keep it over medium/low heat for 14 minutes. the last 2 minutes are to remove and let the rice finish cooking in its own vapours.

Add the minced garlic and parsley when the broth has reduced in the final section. If you have doubts about the type of rice and its cooking, you simply have to read the manufacturer’s instructions, either on the product’s label or on its official website.
