Rice noodles with vegetables and soy sauce


  • 200 grams of rice noodles
  • ½ red bell pepper
  • 2 purple onions
  • ½ zucchini
  • 8 green asparagus
  • Water
  • 2 tablespoons soy sauce
  • Extra virgin olive oil
  • Salt
  • Preparation

    Clean the vegetables. Cut the pepper, carrots and zucchini into sticks, julienne the onions and the asparagus into three, so that there are bite-size pieces left.

    Put about 4 tablespoons of oil in a pan, add the vegetables , season it and let it brown well.

    When the vegetables are ready, add a tablespoon of soy sauce and mix everything.

    Meanwhile, put plenty of water in a large saucepan to cook the noodles. when it starts to boil, add a little salt and add the noodles. cook for 4 minutes, stirring constantly to make them as loose as possible.

    Drain and soak in cold water to stop them from cooking.

    Mix the vegetables with the noodles rice and add the other tablespoon of soy sauce.

    Serve on a wide tray.
