rice and vegetables


  • 500 grams of sliced pumpkin the size of a bite
  • 1 unit chopped onion
  • < li itemprop = "ingredients"> 2 cloves chopped garlic

  • 50 g raisins
  • 1 unit of chile chopped
  • 2 tbsp . of oil
  • 1 liter vegetable broth
  • 1 small chopped endive
  • 1 unit of mango or papaya boy cut to the size of a bite
  • 2 cups of rice


In a large pot, heat the oil and sauté the onion.

Add the garlic and chili.

Add the rice and sauté one minute.

Add the vegetable broth and bring to a boil.

Add the pumpkin and raisins.

Cover and cook for 5 to 8 minutes over high heat slow.

Serve the squash and rice mixture on a plate.

Put the chopped endive on top, then the chopped mango or papaya.

Garnish with a sprig of fresh coriander and lemon.
