am in love with this recipe because of how simple it is and how rich it is, plus, it is prepared in 10 minutes! It is the perfect dinner for when we feel like something tasty, simple and nutritious. It can be served with salad, raw or cooked vegetables, carbohydrates such as potatoes or bread, healthy fats such as avocado and in general with any ingredient that comes to mind.

Para el revuelto:

  • 400 g de garbanzos cocinados o de bote (15 onzas)
  • 2 cucharadas de zumo de limón
  • 2 cucharadas de levadura nutricional o levadura de cerveza
  • 1 cucharadita de ajo en polvo
  • 1/2 cucharadita de cúrcuma
  • 1/4 cucharadita de pimienta negra
  • 1/4 cucharadita de sal, mejor si es sal negra o Kala Namak
  • 6 cucharadas de hummus

Para servir (opcional):

  • Champiñones salteados
  • Pan (con o sin gluten)
  • Aguacate
  • Tomates cherry

Instructions

  1. If using canned chickpeas, strain and wash . Then put them on a plate or a bowl together with the lemon juice and mash them with the help of a fork.
  2. Add the spices and the hummus and mash again with the help fork until all ingredients are well combined.
  3. Cook the scramble in a skillet (we don’t use oil, but it’s optional) over medium-high heat, stirring occasionally, about 5 minutes or until golden brown.
  4. Serve with your favorite toppings. We serve it with mushrooms that we sauté in a pan with a little water (although you can use oil) until golden brown, whole wheat bread, avocado and cherry tomatoes.
  5. The scramble can be stored in the fridge in an airtight container for 4 to 5 days.

Notes

  • Black salt or Kala Namak has a similar flavor to eggs due to its high sulfur content, which is why it is perfect for making recipes that imitate eggs, although it can be used any other type of salt.
  • You can add your favorite spices or herbs to the scramble.
  • The hummus makes it juicier, so you can add other sauces such as baba ganush or even tahini (in that case I would add less quantity and a little water).
  • Serve with the vegetables or ingredients of your choice.
