As I always tell you, legumes should not be missing from your diet, since they are a super nutritious food, full of proteins and minerals. Legumes are one of the main sources of protein for vegan people. Also, did you know that chickpeas have all the essential amino acids?

For falafel:
  • 200 gr. of dried chickpeas
  • ½ large sweet onion
  • 3 cloves garlic
  • < li class = "ingredient" itemprop = "ingredients"> 1 cup fresh cilantro (without stalks)

  • 1 cup fresh parsley (without stalks)
  • 1 cc cumin powder
  • 1 cc baking soda
  • 1 cc of salt
  • A pinch of black pepper
  • Olive or sunflower oil for frying
For vegan yogurt sauce:
  • 150 gr. of soy yogurt
  • ½ garlic clove
  • Half lemon juice
  • A handful of fresh cilantro (without stalks)
  • A pinch of salt
  • Preparation
    1. Clean the chickpeas and leave them to soak overnight.
    2. After the soaking time, drain the chickpeas and blend them with all the ingredients (except the oil).
    3. Put Heat a good amount of oil in a frying pan to fry the falafels.
    4. Meanwhile, we form the falafels. Take a potion of dough with a spoon, shape it into a ball and flatten it slightly with the palms of your hand.
    5. When the oil is hot, fry the falafel on each side until golden and let them rest on kitchen paper to absorb excess oil. To turn the falafel, you can help yourself with two spoons.
    6. To prepare the sauce, pour the yogurt with the lemon juice into the blender glass , garlic and a pinch of salt. Crush until there are no pieces of garlic. Add the coriander and grind a little more.
    7. Serve the falafel hot accompanied by the yogurt sauce.
