Quinoa with black bean salad


  • 1 1/2 cup quinoa
  • 1 orange pepper, chopped
  • 1 can 540 ml black beans, rinsed and drained
  • 1/2 purple onion, chopped
  • 2 tablespoons canola oil
  • 1 tablespoon cane honey
  • 1/4 cup rice vinegar

Prepare a cup and a half of quinoa in 3 cups of water. You can prepare it according to package directions, or simply use a rice cooker until cooked through (I always use a rice cooker).

Once the quinoa is done, let it cool.

When the quinoa has cooled, add the bell pepper, beans, and chopped onion.

In a bowl, mix the canola oil, honey, rice vinegar, and black pepper. Add to quinoa and mix.

Serve immediately. Bon appetit!
