quinoa porridge


  • 1 cup cooked quinoa
  • 2 cups coconut milk or almond milk. As I used only coconut milk I added a cup of water.
  • 1 tbsp brown sugar
  • 1 tbsp orange zest li>
  • 1 teaspoon vanilla essence
  • optional: 1 cardamom
  • Preparation

    Bring the coconut milk (+water) or almond milk to a boil with the essence of vanilla, cardamom and muscovado sugar.

    When it boils well, add cooked quinoa. Stir until it boils again and lower the heat to a minimum for 5′ and turn off.

    Add the zest and it’s ready.

    You can eat it hot or cold.

    I added on top: activity seeds from @crudencioveg, a plum compote my mom had made, pumpkin seeds, 1/2 sliced banana, flaked coconut and a little agave.
