Ingredients

  • 1.5 cups (< span class="wprm-recipe-ingredient-amount">297 g) lentils-cuites lentils brunes, j’utilise gĂ©nĂ©ralement des lentilles brunes indiennes ( masoor entier)< /span>
  • 1 cup (185 g) Quinoa Cuit
  • Âľ cup (< span class="wprm-recipe-ingredient-amount">120 g) oignon hachĂ©
  • 3 girofle d’ail finement hachĂ©
  • 1 jalapeno hachĂ© (facultatif)
  • 1 /2 cup (50.5 g) CĂ©leri finement hachĂ©
  • ½ cup (64 g) carottes hachĂ©es ou rapĂ©es
  • 1 /3 cĂ c (0.33 cc) sĂ©chĂ© thym
  • ½ TL (0.5 cc) origan sĂ©chĂ©< /span >
  • 1 /2 cĂ c (0.5 cc) Cayenne ou au goĂ»t
  • 1 /2 cĂ c (0.5 cc) ail
  • 2 cuillère Ă  soupe farine de lin ou farine de graines de chia
  • 1 cuillère Ă  soupe ou plus de ketchup
  • 2 TL Soy sauce
  • 1 Ă  2 cuillère Ă  soupe Leverure Nutritionnelle

  • ½ cup (54 g) Chapel ou utilisez de l’avoine grossièrement moulue ou de la Chapelure gf pour faire gf
  • Preparation

  • Cook the lentils and quinoa, drain and set aside.
  • Heat oil in a pan over medium heat. Add onions, garlic and jalapenos and fry for 5 minutes. or until they are transparent
  • Add celery, carrots, thyme, oregano and mix well. Cook for 5 minutes or until vegetables are tender. At this point, add a few currants or dried cranberries and mix. .
  • In a bowl, combine the cooked vegetables, flax meal, cooked lentils, and quinoa and mix. Mash the mixture with a potato masher or by hand so that at least half of the lentils and quinoa are well mashed. (You still want whole lentils).
  • Add sauces and nutritional yeast and mix well. You can also add 1/4 tsp coarsely ground fennel seeds at this point.
  • Add breadcrumbs or coarsely ground oats and mix. Taste and adjust salt and flavor. Add more sauces, herbs, and salt as needed. (To check if the batter is the right consistency, make a burger patty. If the batter is too sticky or mushy, add more breadcrumbs. If it’s too crumbly and doesn’t stick easily, add some wet sauce or 1 flaxseed egg ( 1 tablespoons flax flour mixed with 2.5 tablespoons water) Chill the mixture for 10-15 minutes if the mixture is too wet.

    Form hamburger patties or use a cookie cutter to make patties.
  • Heat a pan over medium-high heat and sautĂ© the patties with or Fry without oil for 4 to 6 minutes or until golden on both sides.
  • Mix the ingredients under the glaze. Glaze the burger patties during the last 2 minutes of cooking or add the glaze just before serving.
  • Serve over vegetables, toppings Your choice with additional glaze. I served the burgers with a chopped cucumber, onion, radish, tomato salad mixed with salt, pepper, lemon and coriander. with a side of sweet potato fries
