Quesadillas of tofu cottage cheese


  • 300 gr semi-firm tofu
  • 1/2 large onion
  • 2-3 chiles verdes serranos < / li>
  • 10 epazote leaves
  • Salt and pepper
  • 12-16 corn tortillas
  • Aerosol oil


Chop the onion and chili into small squares, chop the epazote leaves finely and add everything to a mixing bowl, add salt and pepper to taste.

Add the 300gms of tofu to the onion and chili mixture and with a fork mash the tofu until it is incorporated and mixed with the other ingredients.

Preheat the corn tortillas in a Teflon pan until they are flexible to be able to bend them. place a tablespoon of the ricotta filling in the center of the tortilla and fold it in half to form the quesadillas.

Preheat oven to 350f or broil. cover a baking sheet with aluminum foil and arrange the quesadillas, then spray them with cooking spray and bake them for 20-25 minutes.

Minutes, remember to turn them halfway through so they are golden brown on both sides.
