The temperatures have already dropped and now what we want are warm dishes that comfort us and make us feel good, the problem is that many times these dishes are very caloric and have a bad reputation, but it is not the fault of the poor legumes or the vegetables but from the excess fat provided by ingredients of animal origin such as chorizo or bacon. For this reason, this purifying vegetable broth is ideal.

It is very diuretic, detoxifying and helps us purify and cleanse our body. It has hardly any calories and is very easy to prepare. If you want an even lighter version you can remove the oil and simply cook the chopped vegetables in the water. I like to brown them a little with a splash of oil to give the broth more flavor, but it is totally optional.



  • 1 ó 2 cucharadas de aceite de oliva virgen extra
  • 4 dientes de ajo
  • 1 cebolla
  • 2 nabos
  • 2 zanahorias
  • 1 rama de apio
  • 2 puerros
  • 1 patata
  • 2 hojas de laurel
  • 8 tazas de agua (2 litros)
  • 1 ó 2 cucharadas de salsa de soja o tamari


  1. Pour the oil into a pot and when is hot add the chopped vegetables. Sauté over medium-high heat until golden brown.
  2. Add the bay leaf and water. Increase the heat to the maximum and when it starts to boil, lower it to medium heat. Cook for 1-2 hours.
  3. Strain the vegetables and add the soy sauce or tamari.
