Potato salad "potatoes" without potatoes

Ingredients

  • 200g carrot
  • 1 bunch of celery
  • 100g onion
  • 100-150g cucumber
  • 300g apple
  • 700g zucchini
  • 1 red or yellow paprika
  • 1-2 cups vegan mayonnaise

Preparation

Cut into small squares: apple, zucchini, avocado and paprika.

Cut into small pieces: onion, celery and cucumber.

Grate ( on coarse grater): carrot.

Put everything in a large cup.

Add mayonnaise and stir well. Taste, if necessary you can add lemon juice and salt.

To serve!

It can be stored in the fridge, it lasts a couple of days.
