Hello everyone! Today I bring you a super easy recipe that I improvised from what I had at home, as I’ve been doing lately. Today’s recipe is a simplified potato, onion and spinach gratin. It only has those three main ingredients, plus some spices, water and a little olive oil, so in addition to being an easy recipe, it’s cheap and healthy.
But before getting into the matter, I wanted to tell you that on February 13 I will be in Seville ! The city where I lived for a year, but this time I’m back to present and sign my book at La Casa del Libro at C/ Velázquez 8! Ingredients
3 medium potatoes.
1 onion
3 handfuls of spinach
1/3 cup of water
Oil olive
Black pepper
Salt
Basil
Step by step
- Peel and cut the potatoes into large cubes. Fill a large pot with water and turn it on high heat. Cover and wait for it to boil.
- When it starts to boil, add the potato and cook until it becomes tender and easy to pierce with a fork.
- Meanwhile, peel and Finely chop the onion and sauté it in a pan, along with another drizzle of olive oil.
- When the onion is golden, add the spinach and sauté for a few more minutes, until the spinach is tender. When everything is ready, we turn off the stove.
Cook the potato into cubes and sauté the onion and spinach.
- When the potatoes are cooked, remove them from the water and leave them on the plate. Add a pinch of salt, pepper, basil and 1/3 cup of water little by little, crushing and mixing in the meantime, until you get a creamy texture. We can add more water if necessary.
- Add the sautéed potatoes and mix well.
- Pour the mixture into the mold and press with a fork until the mixture adapts to the mold. < /li>
- Little by little it will brown, so when it is to our liking, we remove it.
- Serve hot!
