Very good morning to all! I know that yesterday I promised you the potato cake recipe but I’ve had some problems with the web, so here I am today writing to you first thing on Saturday. I did not want to delay the recipe any longer because it is fantastic to prepare these cold days at home.

As you know, I don’t have a big oven. What’s more, the oven I use is extremely old and fails more than a fair shotgun, so don’t worry about the difficulty of the recipe because it’s very easy. You don’t need great knowledge in cooking or great tools. Also, I know that many of you are still with the Veganuary challenge , so this recipe could be great for you, because you don’t need any knowledge about vegetarian or vegan cooking to do it.

Ingredients

3 medium potatoes
300 grams of cooked lentils
1 roasted pepper
1 onion
1 garlic
Olive oil
Salt
Basil
Black pepper
Oregano
Water

Step by step

  1. Peel the three potatoes and cut them into large cubes. We put them to cook in abundant water. When they are cooked (they can be easily pierced with a fork) remove them from the water and set aside.
  2. Meanwhile, peel and finely chop the onion and garlic.
  3. Heat up a little of olive oil in the pan and sauté the garlic. When it browns, add the onion until it browns well.

  4. Next, add the chopped roasted red pepper and sauté for 2 more minutes.
  5. Finally, add the lentils and add a pinch of salt, oregano and pepper. Saute for 5 minutes and set aside.
  6. Go back for the potato and place it in a deep bowl. Add a dash of olive oil, a long stream of water (we’ll start with less than 1/3 cup), black pepper, salt to taste, and basil.

  7. Mix and mash with a fork until you get a creamy puree. If you want it to be creamier and less dry, you can add more water.
  8. When it is ready, place a potato base in a mold (about 1cm thick) and place it in the mold with the help of a fork, pressing to make it compact.

  10. Finely, add the last layer of potato and decorate on top with a drizzle of olive oil.
  11. Add the cake in the oven at medium power on from above (about 180 degrees), until gratin.
  12. Remove, season with basil and serve hot.
