Peanut Butter Energy Balls

Ingredients

  • 400 gr. of dates medjool
  • 2 tbsp peanut butter
  • 100 gr. of oatmeal
  • 2 tablespoons coconut oil
  • 100 gr. of roasted peanuts

Preparation

Put the nuts and the oat flakes in the food processor and grind them until you obtain a not very fine flour, then add the dates (pitted!), the coconut oil and the butter of peanut.

Chop and mix until you get a sticky dough.

Make small balls with the mixture. They are tastier freshly made, but they are better if you leave them in the fridge for about 20 minutes before eating them.

They will last several days, but if you want to keep them longer, freeze them 🙂
