Pea sprout salad with miso and mint


  1. 2 handfuls of pea sprouts
  2. 2 roughly chopped cucumbers
  3. A handful of sun dried tomatoes, I’m running to get some Boil water on it to remove the oil and I cut them with scissors because it’s easier than a knife
  4. A large bunch of mint, roughly sliced
  5. 1 Tbsp white miso
  6. Juice of 1 lemon
  7. 1 Tbsp nutritional yeast
  8. A few hulled hemp seeds or sesame seeds


  • Mix the pea sprouts, cucumber, tomatoes and mint in a large bowl.
  • Mix the miso, lemon juice and nutritional yeast in a jar and add to the salad.
  • Mix well with your hands so that all the leaves are coated in dressing.
  • Place the salad on your plate and garnish with the seeds.
