Ingredients
- 2 handfuls of pea sprouts
- 2 roughly chopped cucumbers
- A handful of sun dried tomatoes, I’m running to get some Boil water on it to remove the oil and I cut them with scissors because it’s easier than a knife
- A large bunch of mint, roughly sliced
- 1 Tbsp white miso
- Juice of 1 lemon
- 1 Tbsp nutritional yeast
- A few hulled hemp seeds or sesame seeds
Preparation
- Mix the pea sprouts, cucumber, tomatoes and mint in a large bowl.
- Mix the miso, lemon juice and nutritional yeast in a jar and add to the salad.
- Mix well with your hands so that all the leaves are coated in dressing.
- Place the salad on your plate and garnish with the seeds.
