Pasta with dried tomato sauce


  • Short pasta macaroni or spiral type
  • 4 dried tomatoes
  • Parsley
  • 2 tablespoons of ricotta
  • 1 clove of garlic
  • Salt
  • 2 tablespoons olive oil


Boil the pasta al dente and save a little of the cooking water.

Hydrate the tomatoes in water for about 15 minutes, then drain, put in a processor glass and process together with the garlic, olive oil, parsley and the ricotta.

Pour this into the pan to heat it up and to lighten the mixture, add a little of the cooking water.

Serve pasta with this sauce on top.
