Pasta in a creamy basil sauce

Ingredients

  1. 300 grams of uncooked pasta
  2. 1-2 teaspoons of olive oil
  3. 1 chopped orange pepper
  4. < li>1 chopped yellow pepper

  5. 1 small can of sweetcorn
  6. 2 chopped tomatoes
  7. 1 cup beans fresh edamame
  8. For the vegan basil cream :
  9. 1 cup fresh basil
  10. 1 small avocado
  11. 1/4 cup fresh lemon juice
  12. 2 tablespoons water
  13. < li>2 tablespoons olive oil

  14. 1 teaspoon salt
  15. Black pepper to taste
  16. Chili flakes to taste

Procedure

  • Boil a large pot of water and add the pasta until slightly undercooked
  • Heat the olive oil and add the chopped peppers and zucchini
  • Cook for 10 minutes
  • In a blender, combine the basil, water, olive oil, lemon juice, avocado, salt, black pepper and chili flakes and make the cream
  • Before the vegetables are cooked, add the chopped tomatoes, pasta and beans
  • approx. Cook for 5 minutes
  • Add the basil cream and stir
  • Season with salt, pepper and chilli flakes
  • < li>Garnish with basil leaves
