Papaya and lucuma ice cream

Ingredients

  • 1 medium papaya or medium large papaya
  • 2 tablespoons lucuma
  • A pinch of cinnamon
  • Cocoa nibs and grated / laminated coconut

Preparation

Peel and chop the papaya, put it in the freezer for 6 to 8 hours. after that time, we take it out of the freezer and wait 1 hour.

We beat it with a powerful mixer together with 2 tablespoons of lucuma and a pinch of cinnamon (if we don’t have lucuma we can use 2 frozen bananas together with the papaya) will have a sorbet/ice cream type texture.

We can decorate with cocoa nibs and grated/laminated coconut.

Papaya is, along with pineapple, one of the few fruits that it is digestive for dessert, as it contains proteolytic enzymes (papain) that favor the digestion of proteins.
