A simple spring jam with fresh oranges and thyme. The result is a delicious, not-too-sweet jam that’s perfect for waffles, toast, pastries and shortbread. Only 7 ingredients and 1 bowl required.


  • 5 cups Sweet Orange Segments (about 8 medium navel oranges // peeled & quartered)
  • 1 tablespoon fresh orange peel
  • 1 cup raw and natural cane sugar (Less if you like it less sweet , although it helps with thickening)
  • 1/4 cup fresh orange juice
  • 1/2 medium Lemon, Juice
  • 2 Strands fresh thyme (chopped // 2 sprigs make about 1 tsp Soup )
  • 1 pinch sea salt


  • Teach in oranges, orange juice, lemon juice, and sugar Cook over medium-low heat in a large saucepan over medium-high heat, stirring frequently to combine.
  • Once it comes to a gentle boil, reduce the heat to medium-low and add a pinch of salt and stir. Simmer for about 30 minutes, then add the thyme and orange zest.
  • Continue to cook until the mixture is reduced by about a third. It should be thick and syrupy – be patient as the entire process can take up to an hour. Add a little more sugar to make it even thicker.
  • Thickened once , Take it from the stove and let it cool off. Pour into clean jars and store in the fridge. Lasts a few weeks. When storing in the freezer, use freezer-safe mason jars to avoid cracking.
