Mushroom carpaccio


  • 10 12 mushrooms.
  • Oil,
  • Salt thick
  • Freshly ground pepper
  • Lemon or lime juice
  • Sherry vinegar
  • Ground chilli


Cut as finely as possible some very fresh mushrooms, white and firm, in slices. Put a little olive oil, fat salt, ground pepper and lemon or lime juice on the plate, place the mushroom slices on top and season again with oil, salt, ground pepper and lemon or lime juice, and I personally like it a little sherry vinegar and a little ground chilli pepper, leave in the fridge covered with tightly closed film for at least 30 minutes and that’s it!.
