Mother Earth Salad

Ingredients

  • 150 grams of tofu cut into small pieces and lightly fried
  • 1 tbsp oil for frying tofu
  • 2 thinly sliced celery stalks
  • 1 grated carrot
  • 1 sliced apple in small chunks
  • 1/2 cup raisins
  • 1/4 cup coconut flakes
  • 1 green onion cut into thin slices
  • 3 tbsp soy mayonnaise
  • 2 tbsp curry powder
  • 1 tsp maple syrup or corn syrup
  • Lemon juice
  • Salt to taste < / li>

Preparation

Dry the tofu using a paper towel, cut into small pieces and fry in the oil until golden brown.

Drain and dry on a paper towel and place in a large bowl.

Cut the celery and apple into fine pieces and add to the tofu.

Peel and grate the carrot and add to the tofu.

Slice the green onion and add to the tofu mixture.

Add the raisins and coconut.

Make a dressing by mixing the mayonnaise, curry, maple syrup, lemon juice and season to taste with salt.

Serve salad on a bed of lettuce, top with dressing, and garnish with cherry tomatoes.
