Some time ago I saw on several American blogs some mini zucchini pizzas with cheese and tomato that seemed very original to me. We have made our own version and we have come up with these mini vegan zucchini pizzas with Parmesan cheese and pesto, both vegan and totally homemade.

To make the mini pizzas you just have to cut the zucchini into slices and brown it in a pan or griddle, spread the pesto and sprinkle the cheese. It is a very simple, fresh and ideal aperitif for summer, and it can be prepared in a very short time.




  1. Slice the zucchini (we made about 20).
  2. Sear the slices in a pan with oil or on the griddle.
  3. Spread pesto (1 teaspoon) and sprinkle Parmesan (1/8 teaspoon) on each zucchini slice.
