Very good to all! Today I bring a different recipe and designed to prepare it these days that many of you have some free time at home and you can entertain yourselves. Those of you who follow me on Instagram have already seen the step-by-step video of the recipe. These are mini vegan protein pizzas with potato cheese and various vegetables on top to give them variety and that “pica-pica” and party touch. They are varied pizzas that you can prepare with your favorite vegetables. It seems to me that it is quite interesting to serve them at parties and as “snacks”.

 

Ingredients

For the mini protein pizzas
200 gr of Foodsprings “protein pizza” flour (If you don’t have any, I’ll give you instructions below to make homemade wheat dough)
If you use the previous flour, you will need 200 ml of water.

If you prefer traditional homemade dough
200 grams of strong flour + 50 grams of reserve
130 ml of warm water (1/3 glass)
10 grams of fresh yeast
Oregano
Parsley powder
Salt
Olive oil

For the potato cheese
3 potatoes< br> 2 cloves of garlic
4 handfuls of Nutritional Yeast
1 splash of olive oil
Water

For the pizza
Fried tomato< br> 1/2 zucchini
1/2 onion
2 mushrooms
Soy sauce
Oregano
Garlic powder
Parsley
Salt
Olive oil

Step by step

If you make vegan pizzas with homemade dough

  1. In a bowl, mix 200 grams of strong flour with 10 grams of yeast, salt, oregano and parsley powder.
  2. Using a fork, mix all the ingredients well. Add two tablespoons of olive oil and mix again.
  3. Slowly add the water to the bowl of flour. Knead for several minutes until all the flour adheres to our dough. Next, remove the ball of dough from the bowl and place it on a clean, floured surface.
  4. We impregnate your hands with flour and continue kneading until the dough is homogeneous, dense and does not stick to your hands. If so, add more flour until the dough loses its sticky texture.
  5. Give the dough a round shape, cover with a cloth and leave to rest for 1 hour. (Meanwhile, I recommend that you start preparing the potato cheese.)
  6. After an hour, stretch the dough with a rolling pin, leaving a thickness of just under 1 centimeter and cut the circular shape of the mini vegan pizzas with a glass.
  7. Place each pizza base on a baking tray lined with parchment paper and place the fried tomato in the center with a pinch of oregano and salt.
  8. Now, we continue with the preparation of the pizza following the instructions below.

If you make the pizza with the protein flour from Foodsprings

  1. This type of flour makes everything much easier and faster. You only have to mix 200 gr of this flour with 200 ml of water. Knead very carefully, for about 3 or 4 minutes, until it can be easily balled.
  2. Then, let it rest for 10 minutes at room temperature.
  3. Recover our dough, flour the table with a little of the protein flour, and with a rolling pin we stretch, leaving a thickness of half a centimeter.
  4. We cut the rounded shape of each mini pizza with glasses (pressing against the dough and removing the trimming) .
  5. Place them all on a baking tray lined with parchment paper, add the fried tomato in the center, respecting the edges of the pizza.
  6. Sprinkle salt and oregano on top.
  7. Now, we grease the bases by painting them with a little olive oil and bake them for 10 minutes at 180 degrees.
  8. Remove them, and continue with the next step.

    Now yes, let’s prepare the pizza

    1. From now on the procedure is the same regardless of the dough you use .< /li>
    2. We will prepare the potato cheese: peel and cut the 3 potatoes into medium cubes. Cook them in plenty of water and, when they are soft enough to be easily pierced with a knife, remove them from the water and drain.
    3. Put them in a bowl along with a generous splash of olive oil, two pinches of salt, 2 cloves of garlic, 3 handfuls of nutritional yeast and 1/3 of a glass of water.
    4. Beat with the hand blender until you get a very, very creamy and silky texture. If you find it too thick, you can add more water. I also recommend that you try it to add more garlic, nutritional yeast (which gives it the aroma of cheese) and salt.
    5. Reserve the potato cheese and go with the toppings.
    6. Chop the onion, cut the zucchini and the different types of mushrooms into thin slices.
    7. Place the potato cheese on top of the pizzas, spreading it carefully down the center (I recommend taking a generous amount with a small spoon , place it in the center and then carefully move it to the sides so that the potato cheese itself, due to its weight, settles).
    8. Place the ingredients on top.
    9. Bathe lightly with a splash of soy sauce.
    10. Now, to finish, we paint the edges of the pizza with olive oil (to give it a more tender and not so dry finish) and bake them for about 15 or 20 minutes more at 180 degrees turned on from above and below with fan (depending on the type of dough it may need more time, just wait for the The dough appears golden and the ingredients are toasted.
