Hello everyone! Today, for the first time in a long time, I bring you a recipe with millet, a delicious cereal that is also very versatile, because you can make everything from salads to, as is the case today, some delicious millet and boletus croquettes vegan and soooo easy.
It is a very simple recipe and it seems to me much easier than traditional croquettes, since in the latter it is necessary to achieve an exact creaminess and density to be able to shape the croquettes, and in this case we save it, since the millet is to be the base and the one that will give body to our vegan croquettes.
Ingredients
1/2 cup millet
< span class="" title="Edited">1 cup and 1/2 broth or water
Dehydrated boletus edulis
Nutritional yeast
1 large onion
Wheat flour
3 tablespoons of chickpea flour
Curry< /p>
Garlic powder
Olive oil
Salt
Step by step
- We will start by moisturizing the boletus edulis, in case we have them dehydrated. To do this: submerge the mushrooms in a bowl of hot water and let it rest.
- Meanwhile, calculate 1/2 cup of millet and 1 and 1/2 cups of vegetable broth.
- When the broth starts to boil, add the millet, stir and leave on a gentle boil, until the broth is completely absorbed and the millet is cooked.
- On the other hand, chop an onion and remove the mushrooms from the water. Without throwing away the water, chop the mushrooms and add them to the pan.
- Add a splash of olive oil and sauté the vegetables until they reduce.
- At this point, it will be the millet is ready.
- Add the sautéed millet and stir.
- Prepare a bowl with wheat flour (optionally add 2 tablespoons of nutritional yeast to give it more flavor and stir)  ; and another bowl with 3 tablespoons of chickpea flour with 1/2 cup of the water used to hydrate the boletus. If you haven’t hydrated boletus, use water.
How to prepare millet croquettes
- Now, we take a handful of the millet and boletus mixture and for this we make a ball.
- Now we batter it: for this we pass it through flour, we pass it through the mixture of chickpea flour + water and We pass it through the flour again.
We sauté the millet croquettes
- Made with all the dough, we sauté them in the pan until browned on all sides. You won’t need more than 1/2 finger of very hot olive oil. And that’s it!
< li>Place the vegetable broth in a pot and bring it to a boil. Add 2 tablespoons of curry and 2 small teaspoons of salt.
