Lentil stew without meat

Very good to all! Today I bring you one of the last recipes of the month of January. We are going to take advantage of the fact that we still have some cold time left to continue squeezing the spoon dishes. Today I bring you aMeatless Lentil Stew, obviously, but with the addition that it comes with artichokes and accompanied by mashed potatoes. A format that I had never put together before but now that I have…I love it!

The combination is still healthy, but I warn you that it is super satiating, so I recommend that you serve it in smaller quantities than you would serve the lentil stew alone.&nbsp ;

For the lentil stew:
3/4 cup of raw lentils
1 onion< br> 5 oyster mushrooms
1/2 red bell pepper
3 cooked artichokes
2 bay leaves
Garlic powder
Sweet Paprika
Hot Paprika
Olive oil
For the mashed potatoes
2 large potatoes
Olive oil
Salt< /p>

Step by step

  1. In a pot, heat a splash of olive oil. Add the chopped onion and keep it over medium-low heat, sautéing and stirring until browned.
  2. When it begins to turn transparent and golden, add the pepper and the oyster mushrooms in strips.

  12. Let it cook over low heat, gently boiling. The cooking time may vary depending on the type of lentils, but it will be approximately 1 hour.
  13. When they are cooked, cut the artichokes (if you use them from the can or already cooked) in half and add them to pot.
  14. Keep over medium-low heat.
  15. Meanwhile, peel and cut two large potatoes into medium cubes.
  16. Cook them in a pot with plenty of water until they can be easily pierced with a fork.
  17. When they are ready, turn off the heat and remove them from the water.
  18. At this time, turn off the lentils as well and leave them rest.
