Although at first glance this salad may seem very simple (which it actually is), the dressing that I have made to accompany it gives it a very original touch. It is a sauce made with orange juice and dates. I have adapted the idea from a recipe that appears in the Veganomicón, a great book that I will tell you about very soon.
Ingredients
- 500 gr. of cooked lentils
- 200 gr. of tender shoots or canons
- 100 gr. cherry tomatoes
- 2 avocados
- ½ tender onion
For the sauce:
- 175 ml. of orange juice
- 45 gr. of dates
- 15 gr. of tahine
- Roasted sesame seeds
- Salt
- Black pepper
Preparation
- Clean and drain the lentils.
- Chop the onion, cut the cherry tomatoes in halves and slice the avocado.
- To prepare the sauce, soak the dates in the juice of orange for at least 2 hours. Once the soaking time has passed, add the tahini, salt and ground pepper. Crush until there are no pieces of dates left and add the sesame seeds.
- Lay out a base of tender shoots, put on top the lentils, tomatoes, onion, the sauce and dress.
- We serve the salad accompanied by some slices of avocado.
