Although at first glance this salad may seem very simple (which it actually is), the dressing that I have made to accompany it gives it a very original touch. It is a sauce made with orange juice and dates. I have adapted the idea from a recipe that appears in the Veganomic√≥n, a great book that I will tell you about very soon.

Lentil salad with orange sauce and dates

  • 500 gr. of cooked lentils
  • 200 gr. of tender shoots or canons
  • 100 gr. cherry tomatoes
  • 2 avocados
  • ¬Ĺ tender onion
For the sauce:
  • 175 ml. of orange juice
  • 45 gr. of dates
  • 15 gr. of tahine
  • Roasted sesame seeds
  • Salt
  • Black pepper
  1. Clean and drain the lentils.
  2. Chop the onion, cut the cherry tomatoes in halves and slice the avocado.
  3. To prepare the sauce, soak the dates in the juice of orange for at least 2 hours. Once the soaking time has passed, add the tahini, salt and ground pepper. Crush until there are no pieces of dates left and add the sesame seeds.
  4. Lay out a base of tender shoots, put on top the lentils, tomatoes, onion, the sauce and dress.
  5. We serve the salad accompanied by some slices of avocado.
