Vegetable salads are very easy to prepare, very fast and you can add any ingredient you have at home. This lentil salad is delicious and we’ve made it with ingredients that we all have in our kitchens, so it can get you out of trouble if you want to eat a healthy dish that’s ready in no time.

  • 400 g de lentejas cocidas o de bote (14 oz)
  • 1/4 taza de cebolla roja (35 g)
  • 1/4 taza de pimiento rojo (35 g)
  • 1/4 taza de pimiento verde (35 g)
  • 1/4 taza de zanahoria (40 g)
  • 1/4 taza de pepino (40 g)
  • 6 tomates cherry
  • 2 puñados de perejil (40 g)
  • El zumo de 1/2 limón
  • 2 cucharadas de aceite de oliva virgen extra
  • 1 cucharadita de sal marina
  • Pimienta negra al gusto


  1. In a large bowl add the lentils together with the vegetables (finely chopped) and add the lemon juice, oil, salt and pepper.
  2. Stir and serve.
