Lentil

Very good to all! Today I bring you a basic vegetarian recipe that was one of the first recipes I learned to prepare back in 2013. I’m talking about these homemade lentil and broccoli burgers, one of the easiest alternatives and accessible to prepare when you want to start cooking recipes and experimenting in this wide world of meatless hamburgers.

I have already said it many times but I will always repeat it, if you have never cooked vegetable burgers before or you have done it but you are bad at it, one of the best ingredients to make them are legumes such as lentils, chickpeas or beans (especially these last two) because due to their density they are very easy to knead.

Ingredients

½ head of broccoli
200 gr of cooked lentils
1 onion
2 garlic cloves
½ red pepper
3 mushrooms + extra as a topping
Olive oil
4 tbsp. Wheat flour tureens (you can use gluten-free)
+ extra wheat flour (we will use to coat)

Step by step

  1. We start by finely chopping the onion and garlic, sautéing in a greased pan with olive oil.
  2. Next, finely chop the mushrooms, broccoli and ½ red pepper and add them to the pan as well.
  3. Sauté everything until it begins to be tender and golden
  4. When it is ready, turn off the heat and pour the sautéed into a bowl, along with the cooked lentils.
  5. Crush with a fork until you get a more or less homogeneous texture.
  6. Add the 4 tbsp . flour soups and mix well. Now we are going to let it rest until it cools down a bit.
  7. Prepare a deep plate with plenty of flour, to coat the hamburgers.
  8. Next, with wet hands (so the dough does not sticks to your hands), take a medium-sized portion of dough, shape it into a ball and flatten it into a hamburger shape, exerting pressure to make it compact, both on the sides and on the top and bottom.
  9. We coat all sides with flour and leave to rest on another clean plate.
  10. We repeat the whole process until we finish all the dough.
  11. Note: If you are a little clumsy, like me, something that can help is to leave the hamburgers already formed in the freezer for between 20 min and 1 hour. Help the burger to be more compact and easier to brown in the pan. But this is optional, sometimes I don’t give them this time and other times I do.
  12. To finish, brown the hamburgers in a pan with a long stream of olive oil on both sides. .
  13. And voila! Put it between bread, with some lettuce, more sautéed mushrooms and vegan sauce< /a>.
