Lemon Cupcakes for Valentine's Day


  • 380 gr wheat flour
  • 280 gr brown sugar
  • 1 teaspoon of chemical yeast
  • 1 teaspoon of salt
  • Half a teaspoon of baking soda
  • 270 ml water or vegetable milk (oats or soy)
  • 200 gr of mild olive oil
  • Two grated skin lemons
  • 1 teaspoon vanilla extract


Heat the oven to 180ºC.

In a bowl, sift the flour with the yeast, salt and baking soda. Add the sugar, water (or non-dairy milk), vanilla, lemon zest and oil.

Stir well with a mixer until a smooth, lump-free mass remains.

< p>We can now prepare the molds and bake it at 180ºC for approximately 12-15 minutes.
