Ingredients
  • 6 leeks
  • 2 small onions
  • 100 gr. of smoked tofu
  • 225 ml. soy cream
  • 1 tbsp brewer’s yeast
  • breadcrumbs
  • Salt and pepper
Preparation
  1. Chop the leeks, onions and garlic.
  2. In the hot pan, add a little olive oil and start to fry the onion. When it begins to turn golden, add the leek and garlic and sauté the vegetables for 10 minutes.
  3. Add the grated or diced tofu and 150 ml. soy cream. Mix well and cook for 15 minutes over low heat. We add salt and pepper to taste and distribute in small pots or in a suitable source for the oven.
  4. In a bowl, mix the 75 ml. of remaining soy cream with the brewer’s yeast and a pinch of salt. Mix well and pour over the vegetables. Sprinkle a little breadcrumbs and gratin.
  5. And now we have our leek gratin ready. Now it’s time to serve it very hot… and enjoy!
