Kale and cauliflower soup


  • 1 large onion
  • 4 cloves garlic
  • 3 medium carrots
  • 1 tsp chopped parsley
  • 1 tsp thyme
  • 6 tbsp of vegetable broth
  • 1 cauliflower
  • 4 cups chopped kale


Sauté the onion and garlic in a little vegetable broth until they begin to soften.

Add the chopped carrots, parsley and thyme. Cook for a few more minutes, adding a little more broth if necessary.

Add the vegetable broth and the chopped cauliflower.

Simmer until the cauliflower is tender.

Place most of the soup in a blender. Leave a few pieces of carrot and cauliflower aside for garnish.

Brush everything into a smooth paste and then return to the pot.

Turn off the heat and stir with chopped kale. Let sit for 5-10 minutes before serving to soften kale.
