Individual mushroom plots


  1. 1 pkg (320g) ready to use puff pastry (all jus rol pastries are suitable for vegans except All Butter and Sweet Shortcrust)
  2. < li>4 large flat mushrooms
  3. 4 tbsp. vegan pesto
  4. 8 sun-dried tomatoes in oil, drained
  5. 150g vegan mozzarella (Cheezly by VBites works well)


  • Preheat oven to 220°C/425°F/Gas 7
  • Roll out the dough and cut into 4 pieces
  • Roll these 4 pieces into squares
  • Place a mushroom on each square and brush the mushroom with the pesto sauce, the tomatoes, then the Cheezly slices

  • Now place the corners of the dough over the filling and press down
  • Place these packets on a baking tray and bake for 20 minutes until the dough is golden brown

These can be prepared and refrigerated until ready to cook, and they can also be frozen after cooking and then reheated.
