In summer we feel like fresh things that help us beat the heat and if they are tasty and hydrate us, all the better. Ice cream is the king of the season, but it’s not usually a healthy food, since it’s full of fat and refined sugar, so sherbet is a great alternative (as long as it’s made with healthy ingredients).

Ingredientes

  • 1 kilo de fruta fresca troceada (2 libras), yo usé mango
  • 1 taza de agua (250 ml)
  • 4 dátiles Medjool
  • 1 cucharada de zumo de limón

Instructions

  1. Pour all ingredients into one < a href="https://www.vitality4life.es/biochef-atlas-power-blender-blender/#tap_a=17671-df9726&tap_s=113573-5c56cf" target="_blank" rel="nofollow noopener">blender  and beat until well incorporated. Store the mixture in an airtight container in the fridge to chill for at least 4 hours, preferably overnight.
  2. To make the sherbet I used a < a href="https://amzn.to/2LuEQdi" target="_blank" rel="nofollow noopener">icebox and followed the manufacturer’s instructions (see notes if you don’t have an icebox). Basically what I did was leave the container from the fridge in the freezer the night before (although it is even better if you leave it for 24 hours) and the next day pour the mixture little by little with the machine running. Then I let her make the sorbet for about 30 minutes. Once the sorbet is ready, it can be eaten directly (I served it with chopped almonds on top), although the ideal is to keep it in the freezer for another 2 hours so that it is firmer.
  3. Sherbet can be stored in an airtight container in the freezer for 1-2 weeks. Ideally, take it out of the freezer 5 or 10 minutes before serving so that it is not so hard.

Notes

  • You can substitute the dates for any sweetener to taste, although I can’t tell you the amount. If the fruit is too sweet, you can remove the sweetener.
  • I only made the ice cream sorbet. I guess it will work if you don’t have one, though I don’t think it will be as creamy. You have to put the mixture in an airtight container in the freezer for 7 or 8 hours depending on the texture you want to achieve. So that crystals do not come out, it must be stirred every half hour for at least the first 2 or 3 hours.
