My goodness, today I come with a recipe that has surprised me! I have already told you about it on Instagram, but for those of you who don’t follow me, story here: really these vegan nuggets were an experiment that I wasn’t sure how they were going to turn out. But after spicing, battering, frying and finally tasting…I have to tell you that they are simply incredible!

To give you an idea, when I gave them to my roommates to try, one of them asked me if they really weren’t made with meat. He basically believed it because he knows I wouldn’t cook with animals!


500 grams of canned Jackfruit
1 tablespoon of garlic powder
1 tablespoon of oregano
1/3 tbsp ground ginger
Tip of a tablespoon of white pepper
1/3 tbsp of black pepper
3 pinches of parsley
1 and 1/2 handfuls of brewer’s yeast
For the batter
1 small tsp Sweet Paprika
1/2 small tsp Hot Paprika
Breadcrumbs (I used the one with garlic and parsley)< br> Flour (I used normal wheat flour)
Corn flake cereals (above I tell you in detail)
Sunflower oil (for frying)

Step by step

  1. The first thing we will do is remove the Jackfruit from the can and pour it into a strainer.
  2. Lo we crumble well, ‘destroying’ everything with our hands, absolutely everything. It is important that there are no thick and hard pieces because then the bite of the nugget will not be as good.
  3. When everything is separated by fine filaments (see the 2nd photo below) We pass it through plenty of water to wash all the Jackfruit well.
  4. Then, we drain it for 2 minutes and transfer it to a plate.
  5. Next we are going to spice it up with 1 tablespoon of garlic powder

  6. Continue with: 1 tablespoon of oregano, two pinches of salt, 1/2 tablespoon of powdered ginger, tip of a tablespoon of white pepper, 1/3 tablespoon of black pepper and 3 pinches of parsley. Mix well with the Jackfruit.

  7. Continue to season with 1 and 1/2 handfuls of brewer’s yeast and mix again. We reserve the Jackfruit dish.
  8. Now we are going to prepare the batter. On the one hand we prepare a dish with plain wheat flour. Reserve.
  9. On the other hand, in another plate, mix the same amount of breadcrumbs as flour and place 4 or 5 handfuls of flaked corn cereals on top, previously undone by hand (see 2nd photo below).
  10. Add a pinch of garlic powder, parsley, salt, 1 small tsp sweet paprika and 1/2 tsp hot paprika.
  11. We mix all the batter and reserve.

  12. We recover our plate of Jackfruit and take a small handful of the dough.Make a ball, enclose it in our hand and press well. The jackfruit will start to lose all the liquid, so we press it for 3 seconds until it loses most of the water and is pressed.
  13. Now, we press with our hands and shape it into a medallion, the typical nugget shape.
  14. We coat it in the pla that has the mixture of flour, breadcrumbs, cornflakes and spices.
  15. Press the nugget again so that the batter adheres well.
  16. To finish the batter, pass it through the plate that has only flour and press again. The nugget must be well covered with flour and with a strong consistency.
  17. Repeat the process with all the nuggets and place them on a plate.
  18. So that they gain even more density and force, we are going to put them in the freezer for 10 minutes.
  19. Then, we heat 2 fingers of sunflower oil over medium heat and when it is very hot (it will begin to bubble) we put the nuggets and brown both sides.
  20. And voila! Serve them hot and with ketchup or any sauce that you like. You can give it the final touch by adding a pinch of salt above the nuggets.
