Although we already had a homemade tomato sauce on the blog, I I was really looking forward to this recipe. In case you don’t know it, it is a typical tomato sauce from Italy, which is usually prepared with tomato, garlic, onion and herbs. I love it, in fact I think it’s my favorite tomato sauce.

- 1–2 cucharadas de aceite de oliva virgen extra, agua o caldo de verduras
- 4 dientes de ajo, troceados
- 1/2 cebolla, troceada
- 1 lata de tomates de 810 g (28 oz)
- 2 cucharadas de concentrado de tomate (opcional)
- 1 cucharada de orégano seco
- 1 cucharadita de sal
- 1/8 cucharadita de pimienta negra molida
- 6 hojas de albahaca fresca
Instructions
- Pour the oil, water or broth into a pot and when hot add the garlic and onion. Sauté over medium-high heat until golden brown, stirring occasionally. Add more oil, water or broth if necessary.
- Add the rest of the ingredients (canned tomatoes, tomato paste, salt, pepper and oregano), except the fresh basil. Stir and cook over medium-high heat for 10 minutes with the lid on, then another 10 minutes with the lid off, over medium heat.
- Add the basil leaves , stir and cook 5 more minutes.
- You can eat it immediately or let it cool and store it in airtight containers in the fridge for a week. I know there are people who make preserves and prepare them for the whole year, but I’ve never tried the procedure, so I can’t tell you how long ours will last.
- We serve it with a little pasta, but it can be used in many other dishes such as pasta, pizza, lasagna, meatballs, stuffed aubergines, stews a> or even as dip.
Notes
- We don’t whip the marinara sauce because we like it that way, but if you want you can whip it using a hand blender or a jug blender.
- You can also use fresh tomatoes or crushed tomato.
- We do not add any sweetener to contrast the acidity of the tomato because we like it that way and we prefer to avoid sweeteners if they are not essential, but if you want you can add the one you like best to taste.
- Add your vegetables, herbs and favorite spices.
