You may be wondering how many Heura burritos recipes are too many on this blog. The answer is: there are never too many. 🙂
Today I bring you an improvised recipe that I prepared yesterday to eat: some vegetable burritos stuffed with Heura (a super rich vegetable protein that you have for sale in many health food stores and some supermarkets) , onion strips, red pepper strips, shiitake mushrooms (which I had in the fridge and which needed to be cooked urgently) and a vegan mayonnaise sauce with garlic and herbs. I used a sauce that I already had in the fridge, but I leave you here the recipe. I also added a a little fresh lettuce to add a little more moisture and freshness to the dish. TOP Combination 🙂
Ingredients
Wheat tortillas for burritos 1 box of Heura (then choose original or Mediterranean snacks) 1 red pepper 1 onion 5 shiitake mushrooms Olive oil Sweet paprika Garlic powder Parsley Salt *Optional: vegan mayonnaise (recipe here)
Step by step
- If you are going to use frozen Heura, remove it from the freezer now.
- First we will chop the onion into strips, and place it in the pan with a generous splash of olive oil.
- Let it sauté over medium-low heat, stirring periodically.
- Meanwhile, cut Cut the red pepper and the shiitake mushrooms into strips.
- When the onion begins to soften, add the pepper and the shiitake mushrooms.
- Sauté until it begins to brown slightly. li>
- Next, we add the Heura and sauté it until it begins to brown very slightly. Make sure you do it on both sides.
- When it’s taking on some color, add 2 small teaspoons of sweet paprika, 2 pinches of parsley, 3 pinches of garlic powder and two more pinches of salt.
- We stir and make sure to brown it well, over medium heat, so that everything is sautéed with care.
- When it’s ready, we remove and fill the burritos with the sautéed, chopped lettuce pieces and the mayonnaise sauce.
