Espirales con salsa de boletus vegana

  • 400 whole wheat pasta
  • 250 ml. of vegetable cream for cooking
  • 300 gr. of various mushrooms
  • ½ onion
  • oil
  • Rosemary
  • Salt
  • Pepper
  • Preparation
    1. In a pot, boil the water to cook the pasta for the time indicated by the manufacturer. Once the pasta is al dente, drain it and reserve.
    2. In a hot pan, add a little oil and fry the onion. When it starts to colour, add the mushrooms and sauté them for about 5 minutes.
    3. Add the cream and cook for a couple of minutes. After that time, pour the entire contents of the pan into the blender glass and blend. We add salt, pepper and rosemary to taste to our sauce.
    4. Finally, we mix the boletus sauce with the pasta. We served hot with some sautéed mushrooms that we had reserved.
