Healthy, vegan, and gluten-free oatmeal chocolate chip cookies made with 10 healthy ingredients! Tender on the inside, crispy on the outside, SO delicious!


  • 3/4 cup < span class="wprm-recipe-ingredient-name">almond flour or almond flour ande*
  • 3 / 4 Cup Oatmeal
  • 1/4 cup finely grated (dried) unsweetened coconut (or you can try adding more almond flour, oatmeal, or even a gluten-free flour mix)
  • 1/4 cup vegan dark chocolate (shaved or chopped bar)< /li>
  • 3/4 t sp yeast powder< /li>
  • 1/4 TL Sea Salt
  • 1/3 wrapped cup Organic sugar or muscovado sugar (or under coconut sugar)
  • 1/4 cup aquafaba (the brine/liquid in Kicherer bsendose)
  • 2< /span> Soup almond butter* (or other nut or seed butter)
  • 3 Soup Avocado or melted coconut oil*
  • 1/2 tsp vanilla extract (optional )


  • In a large bowl, mix together almond flour and oatmeal, coconut , vegan chocolate, baking powder, salt and sugar.
  • In another bowl, beat the aquafaba (vibrantly with a mixer or whisk) until light, fluffy, loose ends form. (Add some Weinstein if you don’t beat them.)
  • Add to the aquafaba the almond butter, oil and vanilla (optional) and beat or whisk to combine. (The mixture will drain a little – that’s okay). Then add to the dry ingredients and mix until well combined. You should have a firm, semi-sticky dough (see photo). Cover and chill in the fridge for at least 30 minutes or overnight.
  • Preheat oven to 350 degrees F (176 C) and line a baking sheet with parchment paper.
  • < span style= "display:block;">Cut the chilled dough into about 2 tablespoon portions (I like this scoop) and shape small discs ( see that picture on). Place on a baking sheet with about 1 inch space between each cookie to allow for spread. There should be around 12 cookies.
  • Cook for 10 – 12 minutes or until edges are lightly browned. Be careful not to burn them (especially on the bottom) – they cook quickly towards the end. Remove from the oven and let cool for 5 minutes.
  • Keep leftovers loosealmond milk or  hot cocoa!
