Grilled zucchini club sandwich

I have to tell you that as I write this article I am gulping down the very last bite of the apple-apricot crumble we made yesterday… In fact, the huge gratin dish for 6 or 8 people, we ate it in one day with Kévin… We are out of control!

In short, after this parenthesis “we-are-morfales”, I present to you my super club sandwich garnished with grilled zucchini, lettuce, caviar of eggplant and beefsteak tomatoes. What really good stuff!

I would like to point out that I am not going to put the eggplant caviar recipe back here, so I invite you to go and see this link: aubergine caviar recipe.

  • wholemeal bread – 12 (slices)
  • beef heart tomato – 1 (pcs)
  • sucrine – 4 (leaves)
  • courgette – 1 – 5
  • pepper

  • Wash the zucchini and cut- thinly slice it.
  • In a pan, heat the oil and add the zucchini. Cook them until they are well grilled.
  • Cut the tomato into 8 slices. Clean the lettuce leaves.
  • Toast the slices of sandwich bread.
  • To make the club sandwiches: Start with a slice of bread spread with eggplant caviar, place a slice of tomato, grilled zucchini, a slice of sandwich bread spread with eggplant caviar on both sides, a slice of tomato, a lettuce leaf and finally a slice of sandwich bread to cover everything (spread only on the underside ).
  • Repeat for all 4 sandwiches.
  • Slice your sandwiches diagonally and voila! Enjoy!
