I made crystallized ginger for the ginger molasses cookies and I had some ginger syrup left over. Candied ginger and ginger syrup recipe here. div > li>
Syrup is the water and sugar that ginger is boiled in for about 45 minutes to make candied ginger. Usually some thick syrup is left over.
In a large bowl, combine flour, ginger syrup, candied ginger pieces, lemon juice, and water or almond milk. Mix until just level.
Add more milk or water, 1 tsp each, if the mixture is too thick .< /div>
Add the raisins and mix quickly. Leave the mixture on for 5 minutes
Heat a pancake pan or skillet and spread some vegan butter on top. div>< / li>
Add large spoons of batter to the pan.
Bake over medium-high heat for 3 to 4 minutes, until bubbles appear on top and dough is soft but not runny.
turn around and co. ok 2-3 minutes on the other side
Serve hot with butter, maple or agave syrup, fresh fruit of your choice and tea or coffee!
