Fruit salad with sweet potatoes


  • 2 – 3 large cooked sweet potatoes
  • 50 grams of margarine
  • 1 tbsp lemon juice
  • 1 red pepper cut into small pieces
  • 1 ripe banana cut into pieces
  • 1 apple cut into small pieces
  • 6 dried apricots (apricots) cut into pieces
  • 1/4 soy cream cup
  • Salt and pepper to taste
  • 1 tbsp rice or corn syrup
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tbsp chopped onion (green onion)


In a pan, heat the margarine and sauté the pepper until tender, remove from heat and let cool.

Cut the apples and sprinkle them with lemon juice and then add to the sweet potatoes.

Add the fruits to the sweet potato mixture.

Make the dressing (with the cream, syrup, oil, salt, pepper and spring onion ) and pour over the salad.

Mix well and serve.
